Production and Processing of Xinjiang Jujubes

2024-04-29

Hello everyone, I'd like to introduce you to our Xinjiang jujubes. Here, we have a wide variety of jujube species, and the production is extremely abundant! Some of the more famous ones include Hotan Jade Jujubes, Hotan Big Jujubes, Aksu Big Jujubes, Ruqiang Gray Jujubes, and so on. These jujubes are cultivated in the unique dry climate of Xinjiang, where there is little rainfall and ample sunlight. Plants can fully utilize sunlight for photosynthesis, thus accumulating more nutrients. With low nighttime temperatures, plant respiration slows down, conserving nutrients and enriching the nutritional content of the fruit.

The exceptional sweetness of Xinjiang jujubes comes from their nourishment by the Kunlun and Tianshan mountain snow waters, along with absorption of abundant minerals. Additionally, the air in Xinjiang is fresh and pollution-free, with minimal occurrence of pests and diseases, making Xinjiang jujubes a natural gift of pure, healthy food.

Xinjiang jujubes stand out in size, thickness of skin and flesh, and taste compared to those from other regions. They are rich in nutrients such as vitamin C, protein, calcium, iron, zinc, and more. There are two common processing methods for Xinjiang jujubes in the market: factory processing and natural (artificial) drying.

The advantage of factory processing is that it can produce visually appealing and delicious products from fresh jujubes. However, for gray jujubes, the difference between factory processing and natural drying is not significant. The processing steps generally include procurement, removal of impurities such as leaves, manual selection of heavy objects like stones, classification based on size, soaking in water, two rounds of cleaning, air drying to remove surface moisture, steam or microwave drying, packaging, and storage in a cold room.

The advantage of this processing method is that the product's texture is moderate and suitable for direct consumption. However, the drawback is the relatively high processing cost. Due to water washing, the requirements for storage environment are higher, resulting in a relatively short shelf life.

In contrast, natural (drying) drying is more suitable for processing big and gray jujubes. This method ensures product quality while reducing production costs. However, it is essential to ensure hygiene and safety in both processing methods to safeguard consumer rights.

In summary, Xinjiang jujubes are exceptionally high-quality fruits, surpassing others in taste and nutritional value. If you enjoy jujubes, consider trying Xinjiang jujubes; you'll likely fall in love with them!

As living standards rise, people's awareness of health preservation is increasing. Xinjiang jujubes, as a healthy and uniquely flavorful fruit, have gained significant attention from consumers in recent years. Today, let's discuss how to mass-produce Xinjiang jujubes, giving you a deeper understanding of this delicacy.

First, let's talk about the origin of Xinjiang jujubes. Xinjiang, with its dry climate and abundant sunlight, is an excellent place for jujube cultivation. There are many varieties of Xinjiang jujubes, with the most common being Jun jujubes, gray jujubes, and Zanhuang jujubes, all unique to Xinjiang. Xinjiang jujubes are characterized by their large size, thick flesh, and delicious flavor.

So, how do we process Xinjiang jujubes into tasty snacks? First, we need to select the right raw materials. Xinjiang jujubes should be moderately ripe, neither too raw nor too ripe. Then, we need to clean the jujubes, removing surface impurities and dust. Next, we can choose between natural air drying or using a drying machine. If opting for natural air drying, it's essential to control humidity to prevent mold and spoilage. If using a drying machine, drying time and temperature should be adjusted according to the quantity of jujubes and drying requirements.

After drying, we need to screen and grade the jujubes. Different sizes and qualities of jujubes should be stored separately to ensure a uniform appearance and taste in the final product. For jujubes with surface defects, appropriate trimming or removal is necessary.

Xinjiang jujubes are sweet and nutritious, with the effects of tonifying the middle, benefiting Qi, nourishing blood, and calming the mind. However, be mindful not to overconsume to avoid excessive internal heat. Overall, Xinjiang jujubes make excellent snacks, whether for personal consumption or gifting.

Lastly, processing Xinjiang jujubes is not complicated; following the steps, you can produce delicious jujube snacks. Of course, to increase yield and efficiency, consider investing in a Xinjiang jujube drying machine. These machines utilize air energy heat pump technology, which is not only environmentally friendly and energy-saving but also improves drying efficiency and reduces drying time effectively.

In conclusion, Xinjiang jujubes are a delicacy worth trying. I hope that while enjoying delicious food, you also pay attention to food safety issues, purchase through legitimate channels, and ensure you consume Xinjiang jujubes with peace of mind.

Xinjiang Jujube Drying Process and Equipment:

As we all know, Xinjiang jujubes are sweet and nutritious, highly favored by people. However, fresh jujubes are not easy to preserve and have a short shelf life. To better allow consumers to enjoy the fresh and delicious jujubes, we need to process them. Today, I will introduce you to the drying process of Xinjiang jujubes and related equipment in detail.

Firstly, let's talk about the drying process of Xinjiang jujubes. This process is roughly divided into four steps: preheating, evaporation, drying, and cooling.

  1. Preheating: Before starting the drying process, we need to give the red dates a "warm-up". Specifically, we place the red dates in an environment with a temperature of about 35 degrees Celsius, allowing them to adapt for a period of time. The benefit of this is to avoid the red dates producing a biological protective reaction in a high-temperature environment, leading to the contraction of epidermal cell pores, hardening of the shell, and thus hindering the evaporation of water.
  2. Evaporation: This step mainly involves the large-scale evaporation of free water inside the red dates. During this process, we need to gradually increase the temperature, bringing the temperature inside the drying chamber up to around 65 degrees Celsius within 8 to 12 hours. However, please note not to exceed 70 degrees Celsius to avoid excessive evaporation of water, and also pay attention to dehumidification, maintaining a stable indoor temperature for continuous water evaporation.
  3. Drying: When the internal temperature of the red dates becomes uniform, we can proceed to the drying stage. This process takes approximately 6 hours to complete. In this phase, we must pay special attention to temperature control, preferably maintaining it around 50 degrees Celsius. If the humidity is too high (above 60%), appropriate dehumidification operations can be carried out. As the internal moisture of the red dates gradually balances, we successfully achieve the goal of drying.
  4. Cooling: After drying, the red dates need to be properly ventilated and cooled, and only after they are completely cooled should they be stacked and stored. If the red dates just taken out from the drying chamber are directly stacked in the warehouse, due to the high sugar content in the red dates, these sugars can easily ferment and spoil under the influence of high temperatures, turning the red dates into a pile of mush, and potentially changing the sugars in the red dates, producing sour filaments, causing damage to the red dates. Therefore, the dried red dates must be thoroughly cooled before being stored in the warehouse.

Now, let's take a look at the advantages of the Xinjiang jujube dryer. Firstly, it can effectively reduce the rot rate of red dates. Secondly, by using this equipment, we can improve the quality of dried red dates. Lastly, the weight percentage of dried red dates also increases.

In summary, the Xinjiang jujube drying technology not only ensures the commercial value of red dates, but also reduces the oxidation and ultraviolet damage during the drying process, resulting in less loss and better storage resistance. Additionally, the high temperature during drying has a sterilization and pest control effect, which can kill pests like the peach fruit moth. Compared to sun-dried dates, it may take months to achieve the same quality and moisture content, while dried dates only need a short period of one day and one night to meet the same requirements.

Of course, when using the Xinjiang jujube dryer, we also need to pay attention to some matters. For example, the heating speed should not be too fast, otherwise it may lead to sugarification or carbonization, and even cracking of the dates, affecting their appearance. Also, dried red dates should be stored in a cool place, avoiding direct sunlight. Finally, the drying time should not be too long, otherwise problems like acidified dates may occur.

In conclusion, the application of Xinjiang jujube drying technology and equipment has greatly improved the quality and yield of red dates, providing consumers with higher-quality products. Lastly, our pre-made bag packaging machine can handle various granular food packaging very well, welcome to purchase.
